Quick tomato pie


  • 400 g of puff pastry
  • 250 g of soft goat cheese
  • 3 eggplants
  • 7 tomatoes
  • 3 red onions
  • thyme
  • 1 yellow paprika
  • 2 pieces of garlic
  • olive oil
  • salt, pepper
  • seasoning - mix Napoli
Preparation:Rub the cheese, thyme and crushed garlic in a dish. Add salt and pepper. Grease the baking dish with olive oil, put a puff pastry (pierce a pastry with a fork to avoid bubbles) and smear cheese on a top of pastry. Eggplant slices in advance, for 20 minutes, sprinkle with a salt, put in a colander and press down on top of heavy plate to get rid of the fluid. Cut the onion into rings. Put onion and eggplant slices on cheese and chopped tomatoes on a top. Cut on a small cubes paprika and sprinkle on a top. Add thyme, salt and pepper. Send to a 180 oven for 40 minutes. Before serving, sprinkle with seasoning - mix Napoli. Serve warm.
